Ingrained originated with one family's obsession with nourishing Nashville, Tennessee!
One man + one woman + eight children = ten organic foodies who fell in love with the people and food of Nashville. AS they sought an entry into the region's eclectic mix of all things diverse, culturally rich, and artisan, the idea for an einkorn bread delivery service was born...

We are the Freeborn family, and we run Ingrained Bakery.
We love food.
We believe that food isn't just fuel; it is a celebration — a celebration of the care of a good God over His created beings and the fellowship of those beings in our communion through life.
We love bread.
Humans have always loved bread. We call it the staff of life. Bread was such an important component of the ancient diet that the Bible simply terms all food "bread." It was considered an honor for any woman, even a queen, to bake this daily staple, and Arab cultures considered it too sacred to be cut with a knife. There is a primal need within each of us for bread, the ultimate comfort food.
The Wheat Crisis
With the advent of mega-farming, hybridization, and GMOs, wheat was denatured from a sustaining superfood to a poison, wreaking such havoc on our health that millions of people are now considered gluten-intolerant and are suffering debilitating mental and physical illnesses as a result. Seeing the damage that bread was causing in our lives and in the lives of our friends, we were determined to get rid of this destructive foodstuff for good.
But something bothered us. Why would a good God give the human race a gift that was so destructive? If wheat was so wrong, why did the Lord's prayer beg for its daily provision?
Although many Paleo sympathizers were responding to this wheat crisis by eliminating wheat from their diets, and along with it, the tradition of eating bread, we knew there must be a more sustainable answer.
A Good Gluten?
Enter einkorn flour.
We discovered that this ancient grain is the original wheat. Its genetic make-up has never been tampered with by man. This means that even though bread made with it is as high in gluten as bread made with modern wheat is, the gluten is structurally different. It reacts differently in the body. New research shows that the gluten in einkorn may even be tolerated by individuals diagnosed with genetic Celiac disease.
Einkorn is also a nutritional powerhouse.
Containing large amounts of essential minerals and antioxidants and more protein than any other grain, einkorn is incredibly nourishing and sustaining.
Couple all this with the ancient method of sourdough baking (the oldest form of baking), and you have an easily digestible, nutrient-rich superfood at your disposal.
Our Products
Ingrained baked goods are slow-fermented, leavened with wild yeast, and then baked with primitive innovation in a wood-fired oven. All of our products are made exclusively with einkorn flour, 100% organic ingredients, and small amounts of natural sweeteners. We have a family commitment never to sell an item we would not personally feel good about eating on a daily basis.
And eat them we do.

How We Roll
In the little villages of Italy, Spain, and France, and even once upon a time in America, the village baker would rise early in the morning, bake his perfectly crusty, golden loaves, and deliver them to his community. We want to be your village baker. We want to bring back "our daily bread" in its purest, most nutritious form. Our desire is to be in relationship with our customers. We want to model Ingrained after bakeries of pre-industrial eras, when more than product was exchanged, and friendship and mutual respect were fostered.
Utilizing our vintage 1967 Dodge van, affectionately dubbed Crusty, we deliver fire-baked goods to your door (and other designated locations), just like in our grandparents' day.
